Thai Green Papaya Salad

Ingredients

  • 1 green papaya, julliened
  • 1 cucumber, julliened
  • 1/2 red onion, julliened
  • 1 cup bean sprouts
  • 1/4 cup mint leaves, juillened
  • 1/4 cup cilantro leaves, chopped
  • 2 tbs peanuts, toasted and chopped
  • Kosher salt and black pepper to taste
  • 2 red Thai chilies, chopped with seeds
  • 1/4 cup rice vinegar
  • Juice of 1 lime
  • 3 large cloves garlic, minced or pressed
  • 1/2 tbs red chili paste
  • 1 tbs sugar
  • 1 1/2 tbs peanut oil
  • 1 tbs fish sauce

This is one of our favorite salads. Crisp, crunchy, spicy, sour, sweet, and salty.

 

  • Mix all ingredients for salad in a large bowl.
  • In another large bowl whisk all ingredients for dressing.
  • Pour dressing over salad and mix.
  • Recipe may be doubled or tripled.
