Cold Asian Noodles with Peanut Sauce

Ingredients

  • 1 lb pound Asian wheat or rice noodles
  • 3 garlic cloves, minced
  • 1/2 cup cilantro, chopped
  • 1 tbs fresh ginger, minced
  • 1/2 cup smooth peanut butter
  • 2 tbs soy sauce
  • 2 tbs soy sauce
  • 2 tsp siracha chili sauce
  • 1 Serrano pepper chopped seeds and all (optional for spicy)
Asian in origin this dish is spicy and savory.

 

  • Cook noodles following package instructions. Cool
  • In a large sauce pan add all other ingredients and simmer over low heat for 20 minutes, stirring frequently.
  • Let cool slightly.
  • Serve over cold noodles

*Note: you may also use this sauce to pour over poached shredded chicken or shrimp.
