Flank Steak Fajitas
Ingredients
• 1 lb of flank steak | ||
• 1/4 cup of extra virgin olive oil | ||
• 1 tbs oregano | ||
• 1 tbs ground cumin | ||
• 2 cloves garlic, minced | ||
• 1 small onion, minced | ||
• 2 jalapenos or Serrano chilies, seeds removed and chopped | ||
• Kosher salt and fresh cracked black pepper | ||

• Shredded Pepper jack cheese | ||
• Sour Cream | ||
• Shredded lettuce | ||
• Chopped tomatoes | ||

Here is a wonderful version of fajitas.The key to this recipe is to marinate the meat overnight. Once the meat has marinated it is a quick and easy recipe to prepare.
Directions:
- In a non reactive bowl add the olive oil, oregano, cumin, garlic, onions, peppers, salt and pepper.
- Cutting across the grain, slice the flank steak into 1/2 inch strips.
- Add the steak to the marinade and mix to cover.
- Refrigerate and cover the steak for 8 hours, or overnight, mixing occasionally..
- In a saute pan using medium heat, with a little oil toast each tortilla, about 30 seconds per side.Reserve and keep warm.
- Remove meat from the marinade.
- In a saute pan using high heat stir fry the meat for about 3 minutes,stirring occasionally.
- Divide the meat among the tortillas.
- Garnish each tortilla with the ingredients of your choice.
