Indian Raita

Ingredients

  • 2 cucumbers
  • 1 small yellow onion
  • 2 cups plain yogurt
  • Kosher salt and fresh cracked black pepper to taste
  • 1 tbs chopped fresh mint or 2 tbs of crushed dried mint
This is and Indian recipe that uses Grated cucumbers and yogurt. It has cooling properties and is very refreshing salad and or dip to serve with spicy foods.
  • Peel cucumbers and grate coarsely.
  • Grate onion.
  • Add cucumbers and onion to yogurt.
  • Season with salt and pepper.
  • Add mint.
  • Chill thoroughly before serving.
