Coconut Honey Mustard Chicken Appetizers
Ingredients
2 large boneless, skinless chicken breasts, cut into 1 inch cubes or strips | ||
4 tbs yellow mustard | ||
4 tbs honey | ||
4 tbs honey |
This is great dish to serve as a pass around appetizer.Coconut honey and chicken make a wonderful combination. This appetizer may also be made with shrimp or scallops. Recipe may be doubled.
- Pre heat oven to 400 degrees.
- Blend Mustard and honey in a bowl.
- Dip chicken in the mustard/honey mixture, then roll in coconut.
- Place chicken cubes in a single layer in a large well greased baking dish.
- bake until chicken is golden, about 8 to 10 minutes.
- Using tongs turn chicken over and bake for 5 minutes longer until golden.
- Serve on a bed of red leaf lettuce with toothpicks.
