Cuban Black Beans

Ingredients

  • 1 medium onion, minced
  • 3 cloves garlic, minced
  • 2 tbs olive oil
  • 1 pound dried black beans
  • 3 cups beef broth, canned or homemade
  • 3 cups water
  • 1 cup smoked ham, chopped
  • 1 tomato, chopped
  • 1/4 cup dark rum
  • 2 tsp cumin
  • 2 tsp ground oregano
  • 1 habenero pepper, chopped
This is a classic preparation of a Cuban favorite.

 

  • Saute onion and garlic.
  • Add remaining ingredient and bring to a boil.
  • Reduce heat, cover and simmer for 2 hours.
  • Serve with rice.
