Italian Cole Slaw
Ingredients
1 small head of green cabbage, cored and shredded thinly | ||
1 carrot | ||
1/2 cup shredded red cabbage | ||
1/2 cup of extra virgin olive oil | ||
1/4 cup of red wine vinegar | ||
2 tbs of sugar | ||
kosher salt to taste |
This is a super simple easy coleslaw that is great served in sandwiches instead of lettuce. You can make it in about 15 minutes.
- Shred the cabbages and carrot.
- In a bowl mix the olive oil, red wine vinegar and sugar, and mix well.
