Avocado Ring Salad

Ingredients

  • 1 envelope of unflavored gelatin
  • 1/2 cup hot water
  • 1 avocado, peeled and diced
  • 1 tbs lemon juice
  • 1 cup sour cream
  • 1 tsp sugar
  • 1/2 tsp kosher salt
  • 1 tsp onion powder
  • dash of fresh cracked black pepper
  • 1/2 cup mayonnaise
  • Place the hot water and gelatin in a blender.
  • Blend for 20 seconds.
  • Add remaining ingredients to the blender and blend for 30 seconds. Scrape down the sides of the blender container if necessary. Continue blending until smooth.
  • Take care not to over blend.
  • Pour the mixture into a 3 cup ring mold.
  • Chill until firm.
