Spicy Chicken Chili
Ingredients
2 lbs of boneless, skinless chicken, cut into 1 inch cubes | ||
1/2 cup minced onion | ||
1 15 oz can of tomato sauce | ||
3/4 cup beer | ||
1/2 cup chicken stock | ||
4 tbs of chili powder | ||
1 tbs cumin | ||
2 tsp oregano | ||
1 tbs soy sauce | ||
1 tbs Worcestershire sauce | ||
1 tbs paprika | ||
1 tbs garlic powder | ||
2 tsp red pepper | ||
1 tsp turmeric | ||
1 tsp sage | ||
1 tsp thyme | ||
1 tsp dry mustard | ||
kosher salt and fresh crack black pepper to taste | ||
1 tbs canola oil | ||
scallions, chopped, for garnish |
This is a delicious chicken chili. It is full of the flavors of garlic, chilies, cumin, and oregano. The meat in this recipe is chicken, however it is equally delicious prepared with beef or pork. Recipe may be doubled or tripled.
- In a large sauce pan or stock pot using medium high heat, add the canola oil.
- Add the chicken cubes and brown evenly on all sides.
- Add the onions and cook for another 3 minutes until the onions are soft.
- Add all the other ingredients and stir to mix well.
- Reduce heat to low and simmer for 1 hour.
- Taste to adjust seasoning.
- Serve over rice if desired.
