Basque Marinade

Ingredients

  • 4 garlic cloves
  • 1 tsp white pepper
  • 1 tsp ancho chili powder
  • 1 tsp ground sage
  • 1 cup dry white wine
  • 2 tsp lemon juice
  • 1/2 cup water
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp coarse salt
This is rich marinade frequently used in the Basque region of Spain. It can be used for seafood, meats and is often used to marinate lamb.

  • Combine all ingredients.
  • Allow to soak into meat for 4 hours to overnight.
  • Cook meat in desired manner.
