Pork Tenderloins with Asian Peanut Sauce
Ingredients
2 (1 lb) pork tenderloins | ||
3 tbs canola oil | ||
kosher salt and fresh cracked black pepper to taste | ||
1/2 cup chicken broth | ||
1/2 cup smooth peanut butter | ||
1/2 cup hoisin sauce | ||
2 tbs fresh ginger, minced | ||
Scallion tops for garnish |
These pork tenderloins are spicy flavored with hoisin sauce, garlic, ginger and peanut butter.
- Preheat oven to 375 degrees.
- Season tenderloins with salt and pepper.
- In a large saute pan add the canola oil and using medium high heat brown the tenderloins on all sides.
- Transfer the meat to a roasting pan and roast for 15 to 20 minutes or until an instant read thermometer reaches 160 degrees.
- In a sauce pan add the hoisin sauce, peanut butter, ginger and garlic.
- Using low heat, whisk until combined.
- Remove from heat.
- Slice the tenderloin into medallions and pour sauce over.
