Spiced Sweet Potatoes with Peaches and Cashews
Ingredients
1 1/2 cups sweet potatoes, cubed and cooked | ||
2 tsp lemon juice | ||
2 tbs light brown sugar | ||
1/2 tsp ground cloves | ||
1 (13 oz) can peach halves | ||
1/2 cup cashews | ||
1 tbs butter |
- Combine sweet potatoes, lemon juice, brown sugar, cloves and cashews.
- Drain peach halves and arrange in a buttered baking dish.
- Fill the centers with sweet potatoes, and dot with butter.
- Bake in a preheated 400 degree oven for 20 minutes.
