Healthy Vinaigrette Dressing

Ingredients

  • 2 tbs of safflower oil
  • 2 tbs rice wine vinegar
  • 2 tbs sparkling mineral water
  • 1 and 1/2 tbs lime juice
  • 1 tbs whole grain mustard
  • 2 tbs minced shallots
  • 1 tbs chopped chives
  • dash of kosher salt
  • dash of white pepper
This is a very light dressing that is full of flavor.
  • Combine all ingredients in a bowl and whisk together.
  • Serve over fresh greens.
  • Recipe may be doubled or tripled.
