Pumpkin Bread

Ingredients

  • 1 lb of canned pumpkin
  • 3 eggs
  • 3/4 cup canola oil
  • 1/2 cup water
  • 2 and 1/2 cups of sifted flour
  • 2 and 1/4 cups sugar
  • 1 and 1/2 tsp baking soda
  • 1 and 1/4 tsp salt
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1/4 tsp allspice
  • 1/4 tsp ground cloves
  • 1/2 cup golden raisins
  • 1/2 cup chopped walnuts
  • Preheat oven to 350 degrees.
  • Grease well and flour 2 loaf pans.
  • Beat eggs, pumpkin, oil and water.
  • Sift together flour, sugar, baking soda, salt and spices.
  • Fold into pumpkin mixture.
  • Add raisins and nuts.
  • Divide batter between the 2 loaf pans and fill no more that half full.
  • Bake for about 45 minutes or until toothpick inserted in the middle comes out clean.
