Apple Walnut Raisin Muffins
Ingredients
2 cups sugar | ||
3 eggs | ||
3 cups flour | ||
1 tsp salt | ||
1 tsp cinnamon | ||
1 tsp baking powder | ||
1 tsp baking soda | ||
1 cup canola oil | ||
3 cups of golden delicious apples | ||
2 tsp vanilla | ||
3/4 cup walnuts | ||
3/4 cup raisins |
- Combine all ingredients in a large bowl. Do not over mix.
- Pour into lightly greased muffin tins or paper lined muffin tins. Fill half way. Reserve remaining batter for second baking.
- Place 1 walnut and one or two raisins on top.
- Bake in a preheated 350 degree oven for about 20 minutes or until brown on the top and a tooth pick inserted in the middle comes out dry.
