Blueberry Syrup

Ingredients

  • 2 cups fresh or frozen blueberries
  • 1/4 cup water, more if needed
  • 3/4 cup sugar
  • 1/2 tsp lemon juice

This syrup is wonderful with blueberry pancakes as well as French  toast.

  • Place berries, 1/4 water, sugar and lemon juice in a sauce pan. Use a little more water if necessary.
  • Bring to a boil then lower the heat to medium and boil uncovered until syrupy, about 20 to 30 minutes.
  • Stir occasionally to keep the syrup from sticking.
  • Cool and store covered in the refrigerator.
