Curry Mayonnaise

Ingredients

  • 1 tbs of canola oil
  • 1 small onion, chopped
  • 1 tbs curry powder
  • 2/3 cup chicken stock
  • 1 tbs tomato paste
  • 1 tbs sweet chutney
  • 2 tbs lemon juice
  • 3/4 cup mayonnaise
  • 2 tbs light cream
  • Saute onion in oil for 5 minutes.
  • Stir in curry powder.
  • Add chicken stock, tomato paste, chutney and lemon juice.
  • Bring to a boil then cool.
  • Stir in mayonnaise and light cream to cooled mix.
  • May be stored in refrigerator until ready to use.
