Stuffed Cherry Tomatoes
- 20 cherry tomatoes
- 2 oz of soft goat cheese
- 2 oz of ricotta cheese
- 1 clove garlic, finely minced
- 1 tbs parsley, finely chopped
- Dash of kosher salt and fresh cracked black pepper
- Slice the tops from the tomatoes and hollow out and remove seeds.
- Add the cheeses garlic and parsley to a bowl and mix well until smooth. Season with salt and pepper.
- Spoon mixture into the tomatoes and refrigerate for several hours before serving.
