Cuban Chicken
Ingredients
2 lbs of chicken, cut up | ||
2 tbs canola oil | ||
1 can chicken broth | ||
1 (14oz) can of diced tomatoes | ||
1/3 cup water | ||
1 small onion, chopped | ||
4 cloves garlic, minced | ||
1 tsp tumeric | ||
2 tsp ground cumin | ||
kosher salt and fresh cracked black pepper to taste | ||
1 bay leaf | ||
8 oz bag of frozen peas | ||
1 cup rice | ||
1/2 cup whole green pimento stuffed olives | ||
2 tbs cilantro | ||
1 Serrano pepper, seeded and chopped |
- In a large saute pan or iron skillet, brown the chicken in oil. Season with salt and pepper.
- Add all other ingredients, except for the rice and simmer partially covered.
- Cook rice according to package directions.
