Cuban Chicken

Ingredients

  • 2 lbs of chicken, cut up
  • 2 tbs canola oil
  • 1 can chicken broth
  • 1 (14oz) can of diced tomatoes
  • 1/3 cup water
  • 1 small onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp tumeric
  • 2 tsp ground cumin
  • kosher salt and fresh cracked black pepper to taste
  • 1 bay leaf
  • 8 oz bag of frozen peas
  • 1 cup rice
  • 1/2 cup whole green pimento stuffed olives
  • 2 tbs cilantro
  • 1 Serrano pepper, seeded and chopped
  • In a large saute pan or iron skillet, brown the chicken in oil. Season with salt and pepper.
  • Add all other ingredients, except for the rice and simmer partially covered.
  • Cook rice according to package directions.
