Italian Tomato Bruschetta
Ingredients
3 large ripe tomatoes, peeled, seeded and diced | ||
2 tbs fresh basil, chopped | ||
2 shallots, minced | ||
2 tsp dried oregano | ||
1 tbs extra virgin olive oil | ||
1 tbs extra virgin olive oil | ||
kosher salt and fresh cracked black pepper to taste | ||
1 french baguette loaf, cut into 1 inch pieces | ||
Parsley for garnish | ||
Lemon zest for garnish |
- Add all ingredients, except for baguette in a non metal bowl.
- Gently mix well.
- Cut baguette into 1 inch slices and place on a baking sheet. Bake at 350 degrees for 5 to 7 minutes or until lightly browned.
- Remove baguette slices from oven and place a table spoon of the tomato mixture on top of each slice.
- Garnish with parsley and a little lemon zest.
