Jicama Cilantro Slaw

Ingredients

  • 1/4 cup canola oil
  • 1/4 cup canola oil
  • 2 tbs cilantro, torn
  • 2 tbs cilantro, torn
  • 1 tsp kosher salt
  • dash of black pepper
  • dash of black pepper
  • 1 cup green cabbage, shredded
  • 1 cup red cabbage, shredded
  • 1 cup carrots, cut into thin strips
  • 2 scallions, cut on the bias
  • In a large salad bowl, stir together the oil, lime juice, cilantro, sugar, salt, black pepper and red pepper.
  • Whisk in sugar until is dissolves.
  • Add the salad ingredients and toss to coat.
  • Cover and refrigerate until ready to serve.
