Mexican Slaw
Ingredients
4 cups green cabbage, shredded | ||
1 cup red cabbage, shredded | ||
1/4 cup red onion, chopped | ||
2 Serrano peppers, seeded and minced | ||
2 tbs fresh cilantro, chopped | ||
8 (oz) corn drained | ||
1/2 green bell pepper, diced | ||
1/2 red bell pepper, diced | ||
1 cup of sharp cheddar cheese, grated | ||
fresh cilantro sprigs for garnish | ||
3/4 cup prepared or fresh made ranch dressing | ||
1 tbs fresh lime juice | ||
1 tsp cumin | ||
2 tsp kosher salt | ||
1 tsp black pepper |
- In a large salad bowl combine all of the salad ingredients, except for the cilantro sprigs.
- Combine the ingredients for the dressing and mix well.
- Do not add dressing to salad until ready to serve.
- Add dressing until desired consistency is achieved.
