Pea Salad
Ingredients
2 packages of frozen peas, cooked | ||
6 slices of bacon, cooked crispy and crumbled | ||
6 scallions, chopped | ||
1 tomato, chopped | ||
1 cup sour cream | ||
juice from 1 lemon | ||
6 to 8 basil leaves, torn | ||
kosher salt and fresh cracked black pepper to taste |
- Blanch peas in boiling water for 2 minutes.
- Drain and place peas in a ice bath to stop cooking.
- Add all ingredients to a non metal bowl and gently mix well.
- Chill for at least one hour and serve in lettuce cups.
