Southern Corn Bread Salad
Ingredients
| 1 package of Jiffy corn bread mix | ||
| 1 cup chopped celery | ||
| 1 green pepper, chopped | ||
| 1 bunch of scallions, chopped | ||
| 1 large ripe tomato, chopped | ||
| 1/2 lb of bacon, fried crispy and crumbled | ||
| 2 tsp garlic powder | ||
| 1/2 cup mayonnaise | ||
| kosher salt and fresh cracked black pepper to taste |
- Bake bread according to package directions, and crumble.
- Mix cornbread with remaining ingredients and add mayonnaise to moisten
