Tangy Cole Slaw

Ingredients

  • 1 head cabbage, shredded
  • 1 cup chopped tomatoes
  • 1/2 cup cilantro, chopped
  • 2 cloves garlic, chopped
  • kosher salt and ground black pepper to taste
  • 2 tsp celery seed
  • 1 tbs Dijon mustard
  • 4 tbs red wine vinegar
  • 1/2 cup olive oil
  • Combine the cabbage, tomatoes and cilantro and chill.
  • Mix the garlic, salt, pepper and vinegar in a bowl.
  • Whisk in the olive oil.
  • Add half of the dressing to the slaw and mix.
  • Add more dressing if needed.
