Thai Peanut Salad Dressing

Ingredients

  • 1/2 cup chunky peanut butter
  • 1/2 cup cider vinegar
  • 1 cup canola oil
  • 1/2 cup sugar
  • 1/2 tsp fresh chilies, chopped
  • 2 tbs scallions, chopped
  • Whisk together all ingredients.
  • Serve as a dressing for spinach or as a sauce with grilled poultry, meat or noodles.
