Traditional Shrimp Creole

Ingredients

  • 1 and 1/2 lbs of shrimp, peeled and deveined, tails on
  • 1 large onion chopped
  • 2 tbs canola oil
  • 1 clove garlic, minced
  • 4 stalks celery, chopped
  • 1 green bell pepper, chopped
  • 3 bay leaves
  • 1 (15oz) can of tomatoes
  • 1 large can of tomato sauce
  • 3/4 tbs chili powder
  • dash of Tabasco sauce
  • 2 tbs lemon juice
  • 2 cups rice
  • Cook rice according to package directions and set aside.
  • Saute onions in oil.
  • Add garlic, celery and pepper and cook using medium heat for about 5 minutes.
  • Add remaining ingredients, except  for rice and shrimp and simmer for 1 hour.
  • Add shrimp and cook until shrimp are pink, about 8 minutes.
  • Serve over rice.
