West African Peanut Sauce

Ingredients

  • 5 cups water
  • 4 ripe medium tomatoes, chopped
  • 1 tbs vegetable oil
  • 1 onion, chopped
  • 1 onion, chopped
  • 1/4 cup peanut butter
  • 2 tbs tomato paste
  • 2 beef bouillon cubes
  • 1 large fresh okra, chopped
  • Put water, tomatoes, oil in a large sauce pan.
  • Cover and boil for 10 minutes.
  • Add onion, salt, peanut butter, tomato paste, and bouillon cubes.
  • Add okra and reduce heat. Simmer for 20 ┬áminutes.
  • Goes well with beef or chicken, served over rice.
