Chinese Egg Drop Soup

Ingredients

  • 2 cups of chicken stock
  • 1 egg beaten
  • 1 scallion, chopped
  • Add the stock to a sauce pan and bring to a boil, then reduce to a simmer.
  • Gradually pour the egg in a thin stream into the simmering stock, while stirring gently.
  • Add scallions on top for garnish.
