Kale and Lentil Soup

Ingredients

  • 1 bunch of kale (12 oz) coarsely chopped
  • 1 onion, minced
  • 3 cloves garlic, minced
  • 1 can of diced tomatoes in juice
  • 1 stalk of celery, minced
  • 1 cup lentils
  • 4 cups chicken or vegetable stock
  • 1 jalapeno pepper, minced
  • 1/2 tsp ground cumin
  • 1/4 cup lemon juice
  • Rinse the lentils.
  • Place everything except the lemon juice in a large stock pot.
  • Bring to a boil, cover and simmer for 1 hour.
  • Stir in the lemon juice and serve.
