Kale and Lentil Soup
Ingredients
1 bunch of kale (12 oz) coarsely chopped | ||
1 onion, minced | ||
3 cloves garlic, minced | ||
1 can of diced tomatoes in juice | ||
1 stalk of celery, minced | ||
1 cup lentils | ||
4 cups chicken or vegetable stock | ||
1 jalapeno pepper, minced | ||
1/2 tsp ground cumin | ||
1/4 cup lemon juice |
- Rinse the lentils.
- Place everything except the lemon juice in a large stock pot.
- Bring to a boil, cover and simmer for 1 hour.
- Stir in the lemon juice and serve.
