Lemon Lime Ice Cream Pie

Ingredients

  • 1 pre baked (9 inch) graham cracker crust pie shell
  • 2 envelopes unflavored gelatin
  • 3/4 cup sugar
  • 1/4 cup lemon juice
  • 1/2 cup lime juice
  • 1 and 1/4 cups water
  • 1 tsp lemon zest, grated
  • 1 tsp lime zest, grated
  • 1 pint vanilla ice cream
  • Prepare the pre baked pie shell and cook completely.
  • Mix together the gelatin and sugar. Set aside.
  • Combine the lemon juice, lime juice and water and bring to a boil.
  • Add the gelatin mixture and stir until dissolved.
  • Remove the pan from the heat.
  • Add the lemon and lime zests.
  • Stir in the ice cream. Mix well.
  • Chill until slightly thickened.
  • Turn the filling into the pie shell.
  • Freeze until set.
