Onion Pie

Ingredients

  • 1 frozen (9inch) pie crust, thawed
  • 1/4 cup unsalted butter
  • 2 cups peeled, thinly sliced onions
  • 4 eggs beaten
  • 1/2 cup heavy cream
  • 1/8 tsp nutmeg
  • 1/8 tsp nutmeg
  • 2 tsp black pepper
  • 1/2 tsp hot paprika
  • 1 cup grated Swiss Cheese
  • In a large saute pan, melt the butter.
  • Pre- bake the pie crust for 10 minutes at 400 degrees. Remove from oven and set aside.
  • Add the onions and saute’ until golden brown.
  • Remove the pan from the heat.
  • Combine the onion mixture, eggs, cream, nutmeg, salt, pepper paprika and cheese. Mix well.
  • When the filling is prepared, preheat the oven to 425 degrees.
  • Turn the filling into the pie crust.
  • Bake for 20 to 25 minutes or until the pastry is golden brown and the filling is set.
  • Serve hot.
