Tex -Mex Pinto Beans

Ingredients

  • 3 (15 oz) cans of pinto beans, drained and rinsed
  • 1 cup celery, chopped
  • 1/2 cup green pepper, chopped
  • 1 jalepaeno pepper, chopped
  • 1/2 cup chopped onion
  • 2 cloves garlic, chopped
  • 1 cup tomato, chopped
  • 1 (4 oz) can of green chilies, chopped
  • 2 cups cheddar cheese, shredded
  • 3 tsp chili powder
  • 3 tsp chili powder
  • 1 cup mayonnaise
  • 1 cup tosada chips, crushed
  • Combine the beans, with all ingredients except for the tosada chips.
  • Mix well, then add to a baking dish.
  • Top with crushed chips.
  • Bake at 350 degrees for 40 minutes.
  • Note: Can be prepared a day ahead and stored in the refrigerator until baking time.
