Black Eyed Pea and Corn Salsa

Ingredients

  • 1 small can of sweet corn
  • 2 cans of black eyed peas, rinsed and drained
  • 6 roma tomatoes, chopped
  • 1 green pepper, chopped
  • 6 scallions, chopped
  • 2 tbs cilantro, chopped
  • juice from 1 lime
  • 2 tbs fresh parsley, chopped
  • 1 jalapeno pepper, diced with seeds
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1/2 cup Italian dressing
  • tortilla chips for dipping
  • Drain the corn and peas and place in a mixing bowl.
  • Add the chopped vegetables, spices Italian dressing and lime juice.
  • Cover and refrigerate for 1 hour before serving.
