Turkish Ground Meat Kabobs
Ingredients
1 lb ground chuck or sirloin | ||
1/2 cup cooked rice | ||
1 tbs minced onion | ||
1 tbs parsley, minced | ||
2 tsp kosher salt | ||
1/4 tsp ground allspice | ||
1/4 tsp ground cinnamon | ||
1/4 tsp ground black pepper | ||
3 small zucchini, cut into 1 inch pieces | ||
1 sweet red pepper, cut into 1 inch pieces | ||
2 tbs olive oil | ||
2 tbs olive oil | ||
2 tsp fresh mint, minced |
- In a large bowl, combine the beef, rice, onion, parsley. salt, allspice, cinnamon and pepper. With you hands mix well until smooth. About 5 minutes.
- Meanwhile if using wooden skewers, soak them in water for about 30 minutes.
- Shape the meat into about a dozen oval meatballs.
- Thread the meatballs onto 4 skewers, alternating with the zucchini and red pepper.
- Preheat the broiler or make sure you have hot charcoal.
- In a non metallic bowl combine the olive oil, lemon juice and the mint. Mix well.
- Brush the kebabs with the oil mixture and broil 4 inches from the heat or cook over charcoal, turning frequently all the time brushing with the oil. About 10-12 minutes.
