Low Calorie Shrimp and Macaroni Salad

Ingredients

  • 3/4 cup macaroni shells
  • 3/4 lb medium shrimp, shelled and deveined
  • 1 cup cauliflower, chopped
  • 1 cup celery, sliced
  • 1/2 cup bottled low calorie French dressing
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup sweet pickle
  • 1/4 cup low calorie mayonnaise
  • 1 tbs lemon juice
  • 1 tbs grated onion
  • 1/2 tsp celery seeds
  • 1/4 tsp fresh cracked black pepper
  • dash of kosher salt

This dish is perfect for a weight loss and diabetic diet. Each serving contains only 83 calories.

Directions:

  • Cook macaroni according to package directions. Add a dash of kosher salt.
  • Drain macaroni and combine with all remaining ingredients and gently toss.
  • Cover and refrigerate for 8 hours before serving.
