Dominica Hot Pepper Sauce

Ingredients

  • 1/2 lb fresh hot peppers, seeded
  • 1 medium onion, minced
  • 2 large cloves garlic, minced
  • 1/4 cup green papaya, grated
  • 1/2 tsp turmeric
  • 2 tsp kosher salt
  • 1/4 cup malt vinegar

Directions:

  • Combine all ingredients in a blender and reduce to a puree.
  • Pour into a sauce pan and bring to a boil.
  • Simmer for 1-2 minutes. Pour into a covered jar. Will keep for several weeks, or you may freeze for up to 6 months.
