Coconut Banana Muffins
Ingredients
1 and 3/4 cups ap flour | ||
3/4 cup sugar | ||
2 tsp baking powder | ||
1/4 tsp baking soda | ||
1/4 cup grated coconut | ||
3 medium bananas, mashed | ||
1/3 cup butter, melted | ||
1 egg, beaten | ||
1 tsp orange rind, grated | ||
1 tsp kosher salt | ||
1/3 cup orange juice | ||
vegetable cooking spray |
Directions:
- Sift together the flour, sugar, baking powder, baking soda and salt in a large bowl.
- Stir in coconut, and make a well in the center of the mixture.
- Combine bananas, butter, egg, orange rind and orange juice. Add to dry ingredients, stirring just until dry ingredients are moistened.
- Spoon batter into muffin pans coated with cooking spray, filling 2/3 full.
- Bake in a preheated 375 degree oven for 25-30 minutes or until lightly browned.
