Coconut Banana Muffins

Ingredients

  • 1 and 3/4 cups ap flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 cup grated coconut
  • 3 medium bananas, mashed
  • 1/3 cup butter, melted
  • 1 egg, beaten
  • 1 tsp orange rind, grated
  • 1 tsp kosher salt
  • 1/3 cup orange juice
  • vegetable cooking spray
Directions:
  • Sift together the flour, sugar, baking powder, baking soda and salt in a large bowl.
  • Stir in coconut, and make a well in the center of the mixture.
  • Combine bananas, butter, egg, orange rind and orange juice. Add to dry ingredients, stirring just until dry ingredients are moistened.
  • Spoon batter into muffin pans coated with cooking spray, filling  2/3 full.
  • Bake in a preheated 375 degree oven for 25-30 minutes or until lightly browned.
