Marinated Mushrooms

Ingredients

  • 1/2 lb mushrooms, sliced
  • 1/2 cup olive oil
  • 2 tbs vinegar
  • 2 tbs lemon juice
  • 2 tsp kosher salt
  • 1 tsp dried basil
  • 1/4 tsp dry mustard
  • dash of black pepper
  • 1 clove garlic, crushed
  • 1 tbs fresh parsley, chopped

Directions:

  • Place mushrooms in a shallow glass dish.
  • Add all other ingredients to a non metal bowl and whisk until well combined.
  • Pour the mixture over the mushrooms.
  • Cover and refrigerate for at least 2 hours, stirring occasionally.
