Maryland Chicken Boil

Ingredients

  • 1/4 cup diced bacon, firmly packed
  • 1 cup rice, uncooked
  • 3 lbs chicken parts
  • 1 (17oz) can corn, drained
  • 1 (14oz) can stewed tomatoes
  • 2 medium onions, quartered
  • 2 tbs Old Bay seasoning
  • 2 tsp paprika
  • 2 and 1/2 cups chicken stock

Directions:

  • In a large sauce pan, fry bacon, then stir in rice to coat with bacon fat.
  • Add in remaining ingredients, cover and bring to a boil, then reduce heat to a simmer.
  • Simmer for at least 1 hour or until chicken is cooked through.
