Parsley Pesto
Ingredients
1 bunch of Italian parsley, chopped | ||
1 garlic clove minced | ||
2 tsp olive oil, more if necessary | ||
1 lemon, zested and juiced | ||
2 tbs panko bread crumbs | ||
kosher salt and fresh cracked black pepper to taste |
Directions:
- Add parsley to a food processor and pulse 6-8 times.
- Add the remaining ingredients and process until a thick sauce is formed.
- Serve over chicken or fish as a sauce.
