Roasted Red Pepper Relish
Ingredients
1 (8oz) jar of roasted red peppers, drained and chopped | ||
2 cloves garlic minced | ||
1 small sweet onion, minced | ||
1 tbs fresh mint, chopped | ||
1/2 tbs fresh lemon juice | ||
1 tbs extra virgin olive oil |
This relish is perfect to garnish on chicken, seafood or lamb as well as spread over crusty bread slices.
Directions:
- Add all ingredients to a non metal bowl and mix well.
- Cover and refrigerate for 1 hour before serving.
- Serve as a relish over chicken, seafood or lamb.
