Spicy Avocado Salsa

Ingredients

  • 2 avocados, peeled, seeded and diced
  • juice of 2 limes
  • 1 tomato, peeled, seeded and dice
  • 1 shallot, diced
  • 2 tbs red bell pepper, diced
  • 1 clove garlic, minced
  • 2 tbs fresh parsley, chopped
  • 2 tbs fresh cilantro, chopped
  • 1/2 tsp oregano
  • 1 tbs extra virgin olive oil
  • 1 tbs white wine vinegar
  • 1 tsp fresh lemon juice
  • 1/2 tsp Dijon mustard
  • 1 Habanaero  pepper, seeded and dices
  • kosher salt to taste

 

  • Add lime juice, lemon juice, shallot, garlic, olive oil, wine vinegar and Dijon mustard to a non reactive bowl. Whisk to combine.
  • Add all other ingredients to a large bowl and pour the lime juice mixture over.
  • Gently combine, cover and chill for at least 1 hour.
  • Serve with chips or atop tacos and enchiladas etc.
