Tomato and Cheese Quesadillas
Ingredients
2 flour tortillas | ||
3 tbs fresh mozzarella cheese | ||
1 scallion, minced | ||
2 small sun dried tomatoes, packed in oil | ||
2 tbs chopped ripe tomatoes | ||
5 fresh basil leaves, cut into ribbons | ||
kosher salt and fresh cracked black pepper |
Directions:
- Brush each tortilla with oil or butter.
- Sprinkle ingredients over 1 tortilla and top with the other.
- Grill for about 2-3 minutes on each side until cheese is melted and the tortilla is slightly crispy.
- Cut into wedges and serve.
