Turkish Salad

Ingredients

  • 1 cup haricot beans, soaked and drained
  • 2 and 1/2 cups water
  • 2 ts oregano
  • 3 tomatoes, sliced
  • 5 scallions, chopped
  • 1 tbs fresh parsley, chopped
  • 1 tbs fresh mint, chopped
  • Dressing:
  • 4 tbs olive oil
  • 2 tbs lemon juice
  • kosher salt and black pepper

Directions:

  • Blend olive oil and lemon juice together and season with salt, pepper and oregano.
  • Mix the cooked beans with the parsley, mint, tomatoes and scallions.
  • Marinate in the dressing.
  • Serve with a bowl of couscous or a salad of cauliflower and mushrooms.
