Basque Marinade

Ingredients

  • 4 garlic cloves
  • 1 tsp white pepper
  • 1 tsp ancho chile powder
  • 1 tsp sage
  • 1 cup dry white wine
  • 2 tsp lemon juice
  • 1/2 cup water
  • 1/4 cup olive oil
  • 1 tsp kosher salt

This is a rich marinade that is good for seafood or meats and is often used to marinate lamb.

Directions:
  • Combine all ingredients.
  • Allow to soak into meat for 4 hours to overnight.
  • Can be stored in the freezer until ready to use.
