Fresh Mozzarella Salad
Ingredients
1 lb ripe tomatoes, cut in half | ||
1/2 lb bocconcini Mozzarella | ||
4 oz arugula | ||
4 tbs extra virgin olive oil | ||
2 tbs fresh lemon juice | ||
4 tbs balsamic vinegar | ||
kosher salt and black pepper to taste |
Directions:
- In a bowl mix the lemon juice and balsamic vinegar. While whisking drizzle in the olive oil and whisk until well combined.
- Add all other ingredients to a bowl, then drizzle dressing over.
- Season with salt and pepper and serve.
