Herring in Cream Sauce
- 2 (8oz) jars pickled herring
- 3/4 pint sour cream
- 4 tbs liquid from herring
- 1/4 cup heavy cream
- 3 tbs sugar
- 1 spanish onion, thinly sliced
- Drain herring and pat dry, reserving liquid from the jar.
- Blend together the sour cream, 4 tbs of the reserved liquid, cream and sugar.
- Add the onion and herring, stir to coat with the sauce and refrigerate until ready to serve.
