Caribbean Green Mango Relish
Ingredients
2 green unripe green mangoes, 1 lb each | ||
2 tsp grated onion | ||
1 tsp fresh hot red pepper, seeded and chopped | ||
1 tbs peanut oil | ||
kosher salt and black pepper to taste | ||
chopped parsley for garnish |
Directions:
- Peel the mangoes and chop coarsely and press the flesh through a wire mesh sieve into a bowl.
- Add the grated onion, hot pepper, salt and pepper.
- It goes particularly well with curry, fish or meat.
