Idaho Potato Lobster Mashed Potatoes

Ingredients

2 and 1/2 lbs peeled and quartered Idaho potatoes
5 oz heavy cream
4 oz salted butter
2 tsp kosher salt
2 oz roasted garlic
2 pinches white pepper
1 lb Maine lobster, steamed, chilled and tail cut into 8 pieces
4 oz salted butter
1 tsp old bay seasoning
1 tbs charred scallions, 1/4 inch cut
  • Boil and steam the potatoes until they are fork tender.
  • In a mixer add the potatoes, cream, butter, salt, pepper and roasted garlic and whip on low speed for about two minutes, then on high speed for 3 more minutes or until smooth.
  • Alternatively you may put the potatoes through a potato ricer the add ingredients to a bowl and beat until smooth.
  • In a saute pan over medium heat add steamed and de-shelled lobster, butter, old bay and charred scallions.
  • Cook until butter is foamy.
  • Place mashed potatoes in a serving dish and place lobster on top, then pour the butter mixture over the lobster and potatoes.
